PORCUPINE MEAT BALLS 1 lb. hamburger 1 egg salt pepper milk 1 scant cup minute rice 1/4 cup onion, chopped Mix together. Make into small balls and cover with tomatoes. Bake at 350 for 1 1/2 hours. BARBECUPS 1 lb. ground beef 1 can refrigerated biscuits 1/2 cup barbecue sauce 3/4 cup shredded cheese 2 T. brown sugar 1 T. minced onion In a skillet, brown beef; drain fat. Add sauce, brown sugar and onion. Separate dough into biscuits. Place in greased muffin cups. Press dough up sides to edge of cup. Spoon meat into cups. Bake at 400 for 10-15 minutes (until golden brown). Sprinkle with cheese. Place under broiler until cheese melts. ORIENTAL SKILLET 1 lb. ground beef 1/2 cup onion, chopped 1 16 oz. can chop suey vegetables, drained 1 cup frozen peas 1 cup celery, sliced 1/2 cup green pepper, chopped 1 1/2 cup water 2 T. cornstarch (or flour) 1 tsp. sugar 1/2 tsp, ground ginger 1/4 cup soy sauce chow mein noodles In a large skillet, cook hamburger and onion until meat is lightly browned. Add chop suey vegetables, peas, celery, green pepper and water. Simmer covered 5-7 minutes, stirring occasionally. Blend together cornstarch, sugar and ginger; gradually stir in soy sauce. Add to beef mixture; cook and stir until thickened and bubbly. Serve with chow mein noodles and/or rice.
