FORGOTTEN COOKIES 2 egg whites dash of salt 2/3 c. sugar 1 pkg. chocolate chips 1 c. nuts, chopped Preheat oven to 400. Beat egg whites with salt until soft peaks form. Add sugar, a small amount at a time.; beat until stiff peaks form. Fold in chocolate chips and nuts. Drop by teaspoonfuls onto well-greased cookie sheets. Place in oven: turn off heat. Leave overnight: do not open oven door. Yield: 60 large cookies. Also good with crushed candy cane instead of chocolate and nuts. STARLIGHT MINT COOKIES Sift together: 3 c. flour 1 tsp. soda 1/2 tsp. salt Cream: 1 c. butter (half shortening may be used): add gradually 1 c. sugar 1/2 c. brown sugar, creaming well. Blend in: 2 eggs, unbeaten 2 T. water 1 tsp. vanilla: beat well. Add dry ingredients; mix thoroughly. Cover and regrigerate at least 2 hours. Open: 1 pkg. solid chocolate mint candy wafers (Can use Andes mints). enclose each wafer in about 1 T. of chilled dough. Place: on greaded baking sheet about 2 inches apart. Top: each with a walnut half. Bake: 375 for 10 - 12 minutes. CONFETTI COOKIES 1 c. sugar 1 tsp. salt 1/2 c. brown sugar 1 tsp. soda 1 c. shortening 1 c. cut-up small gum drops 2 eggs (Use red & green for Christmas) 1 tsp. vanilla 1/2 c. nuts, chopped 21/3 c. flour Cream....sugars, shortening, eggs and vanilla. Mix..........flour, salt, & soda to blend. Add........dry ingredients to creamed mixture and mix well. Sitr in.....gumdrops and nuts. Mix well. Drop......by teaspoonfuls onto greased baking sheet. Dot tops with additional cut-up gum drops, if desired. Bake....at 350 for 15 minutes. Yield.....5 - 6 dozen cookies.
